Stir Fried Rice
- 1 pkg. (6.9 oz.) rice and vermicelli with chicken broth and herbs
- 2 Tbsp. margarine or butter
- 2-1/4 cups water
- 1 Tbsp. soy sauce
- 1 cup chopped cooked chicken (about 8 oz.) Whole Foods 1 lb For $3.99 thru 02/09
- 1/2 cup frozen peas
- 1/2 cup cholesterol-free egg product
- Prepare rice according to package directions in large skillet using margarine or butter, 2 1/4 cups water and soy sauce.
- Cook until liquid is absorbed, about 20 minutes.
- Stir in chicken and peas; increase heat to medium-high.
- Pour egg substitute over rice mixture; cook without stirring until set, about 1 to 2 minutes.
- Stir and serve warm.
