Black Bean Salsa
- 4 whole Roma Tomatoes, Chopped
- 1 whole Red Pepper Finely Chopped
- 1- 1/2 cup Zesty Italian Dressing
- 1 cup Cilantro, Chopped
- 2 cloves Fresh Garlic, Finely Chopped
- 6 whole Green Onions, Chopped
- 1 whole Jalapeno, Finely Chopped
- 1 can Chopped Black Olives Small Size
- 1 can Black Beans, Rinsed And Drained
- 1 can White Shoepeg Corn Rinsed And Drained
- 1 can Blackeye Peas Rinsed And Drained
- Mix all in large mixing bowl.
- Serve with tortilla chips, toast points, crackers or bagel chips.
- Add more or less jalapenos to preference of hotness.
- Also, if making ahead, add tomatoes up to an hour before serving to avoid them getting mushy.
