Cajun Marlin On Sweet Potato Rosti Recipe
- 1 lrg Red sweet potato
- 1 sm Waxy potato
- 1/2 x Onion
- 1 tsp Diced chilli
- 1 tsp Minced ginger Salt and pepper
- 1 x Egg
- 2 slc Marlin fish Oil
- 2 tsp Cajun spices
- Season the fish with spices and oil.
- Blanch the potatoes, then grate them with the onion, chilli, ginger, salt and pepper and fold in the egg.
- Heat some oil in a pan and add in a portion of the potato mix.
- Seal, turn the rosti and seal the other side, then turn out on to a plate.
- Repeat with the rest of the mix.
- Preheat the grill and cook the fish.
- Arrange it on a plate with the rosti and your choice of vegetables.
