Cajun Marlin On Sweet Potato Rosti Recipe

  1. Season the fish with spices and oil.
  2. Blanch the potatoes, then grate them with the onion, chilli, ginger, salt and pepper and fold in the egg.
  3. Heat some oil in a pan and add in a portion of the potato mix.
  4. Seal, turn the rosti and seal the other side, then turn out on to a plate.
  5. Repeat with the rest of the mix.
  6. Preheat the grill and cook the fish.
  7. Arrange it on a plate with the rosti and your choice of vegetables.
