Bookie's Cheesecake Pie
- 12 -14 crumbled graham cracker squares
- 14 cup melted butter
- 12 ounces cream cheese
- 2 eggs, beaten
- 14 cup sugar
- 2 teaspoons vanilla
- 1 teaspoon lemon juice
- 1 teaspoon grated lemon rind
- 1 cup sour cream
- 3 12 tablespoons sugar
- 1 teaspoon vanilla
- For crust:
- Mix graham cracker crumbs and butter, pat into 9 inch pie pan and chill or freeze til firm.
- For cheesecake:.
- Preheat oven to 325F.
- Combine cheesecake ingredients; beat until light.
- Pour into graham cracker crust.
- Bake 25-30 minutes, remove from oven, cool 5 minutes.
- Do not turn off oven heat.
- Topping:.
- Blend topping ingredients, pour over pie.
- Bake 10 more minutes.
- Remove from oven.
- Chill 5 hours or longer.
