Chinese BBQ Baby Back Ribs
- 1 rack baby back ribs (or 2)
- 2 tbsp brown sugar
- 1 tbsp table salt
- 1 tbsp chinese 5 spice
- 1 tbsp powdered ginger
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1/2 tsp cayenne pepper
- 1/2 cup hoisin sauce
- 1/4 cup ketchup
- 1 tbsp soy sauce
- 1 tbsp sherry
- 1/2 tsp sesame oil
- 1/4 tsp chinese 5 spice
- 1/4 tsp powdered ginger
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- There is enough rub and sauce for 2 racks of baby back ribs.
- Remove the membrane from the back of the ribs.
- Mix rub ingredients and seasoned ribs well and refrigerate 24 hours.
- (covered with plastic wrap)
- Mix sauce ingredients and refrigerate until needed (no pre cooking required).
- Place unlit charcoal on the grill for Indirect Heat.
- Add hot charcoal and a drip pan in the middle.
- (add water to the pan).
- Cook ribs at about 325F for an hour and a half.
- Glaze with bbq sauce.
- Close the lid and cook for about 10 more minutes.
- Glaze with BBQ sauce again and cook for additional 10 minutes or so.
- Cook and glaze for a third time as well.
- "Gently" remove from the grill and let cool for about 15 minutes or so before carving and serving.
