Winter Squash Quinoa Bisque
- 1 tablespoon butter
- 1 14 cups minced onions
- 12 cup quinoa
- 1 12 teaspoons dried thyme
- 2 (12 ounce) packages winter squash puree, thawed
- 4 cups chicken broth
- 3 tablespoons minced fresh chives
- In large pot, saute onions in butter until softened.
- Stir in quinoa flakes, thyme, squash and broth; bring to a boil.
- Reduce heat and simmer 25-30 minutes, or until thickened.
- Season to taste with salt and pepper.
- Serve topped with chives.
