Winter Squash Quinoa Bisque

  1. In large pot, saute onions in butter until softened.
  2. Stir in quinoa flakes, thyme, squash and broth; bring to a boil.
  3. Reduce heat and simmer 25-30 minutes, or until thickened.
  4. Season to taste with salt and pepper.
  5. Serve topped with chives.
