Sassy Summer Salmon
- 1 whole Mango, Peeled And Diced
- 1/2 whole Purple Onion, Diced
- 3 whole Tomatoes, Diced
- 1 whole Jalapeno, Diced
- 1 Tablespoon Olive Oil
- 2 whole Limes, Juiced
- 3 whole Avocados, Diced
- 1/2 cups Chopped Cilantro
- 1/2 teaspoons Sea Salt
- 1/4 teaspoons Ground Black Pepper
- 4 pieces Salmon Ready To Grill
- Combine the salsa ingredients, stir, cover and refrigerate for about half an hour before serving.
- Season fish with salt and pepper.
- Heat grill to around 350 degrees.
- Place fish on foil-lined grill to prevent from sticking and burning.
- Cover and cook until fish are flakey and done.
- Remove from grill and plate up.
- Top each serving with a generous portion of prepared salsa.
- Serve with extra lime wedges if desired.
- All you need with this is a yummy salad and a few warm tortillas!
- So easy and refreshing.
