Sassy Summer Salmon

  1. Combine the salsa ingredients, stir, cover and refrigerate for about half an hour before serving.
  2. Season fish with salt and pepper.
  3. Heat grill to around 350 degrees.
  4. Place fish on foil-lined grill to prevent from sticking and burning.
  5. Cover and cook until fish are flakey and done.
  6. Remove from grill and plate up.
  7. Top each serving with a generous portion of prepared salsa.
  8. Serve with extra lime wedges if desired.
  9. All you need with this is a yummy salad and a few warm tortillas!
  10. So easy and refreshing.
  11. Perfect for summer.
