Joyce's Smoked Fish
- 1 quart Water
- 1/2 cup Coarse salt
- 1/2 cup White sugar
- 1 cup Brown sugar
- 1 tsp Butter
- 3 tbsp Maple syrup
- To make the brine mix the first three ingredients.
- Brine depending on the size of the fish.
- Small is good for 4 hours larger can go 8-12 hours.
- Rinse in cold water to remove brine.
- Put on paper towels and let dry.
- Mix the glaze with the last four ingredients and brush on the dry fish.
- Make sure all the ingredients for the glaze are dissolved.
