Joyce's Smoked Fish

  1. To make the brine mix the first three ingredients.
  2. Brine depending on the size of the fish.
  3. Small is good for 4 hours larger can go 8-12 hours.
  4. Rinse in cold water to remove brine.
  5. Put on paper towels and let dry.
  6. Mix the glaze with the last four ingredients and brush on the dry fish.
  7. Make sure all the ingredients for the glaze are dissolved.
