Cream Cheese Penne Pasta
- 3 tbsp oil
- 3 tbsp garlic, minced
- 1 cup red & grenn bell pepper, chopped
- 1 cup mushrooms, sliced
- 1/4 cup white wine
- 3 cup chunky tomato sauce
- 225 grams cream cheese, softened
- 1 1/2 tsp ground pepper
- 2 1/2 tsp salt
- 1/2 tsp oregano
- 1 tsp dried basil leaves
- 1/4 cup black olives, sliced
- 300 grams penne
- 1 cup cheddar cheese, grated
- Cook pasta according to package directions.
- Drain & set aside.
- Saute garlic in oil.
- Add bell pepper, mushroom & olives.
- Add wine, tomato sauce, cream cheese & season with salt, pepper & oregano.
- Simmer for 6 minutes.
- Add basil & cook for another 2 minutes.
- Toss in pasta.
- Sprinkle with cheddar cheese just before serving.
