Coconut Lemongrass Baby Back Ribs

  1. Blend all the ingredients, except the ribs, in a large mixing bowl.
  2. Place ribs, topside facing down, in a large bowl, and pour marinade over top.
  3. Cover, and marinate overnight in the refrigerator.
  4. Heat oven to 400F
  5. Place the ribs on a roasting pan, topside down.
  6. Bake for 35 minutes, basting every 15 minutes with the marinade.
  7. Turn ribs over so that the topside is up, and continue to baste.
  8. Cook for another 35 minutes or more.
