Chocolate Chip Oatmeal Muffins
- 3 cups oat flour
- 1 cup coconut flour
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons sea salt
- 14 cup canola oil
- 12 cup honey
- 14 cup molasses
- 1 teaspoon vanilla
- 1 12 cups buttermilk
- 1 cup milk
- 6 egg whites
- 4 egg yolks
- 2 cups chocolate chips
- Preheat oven to 375*.
- Prepare two muffin tins with paper/parchment liners.
- Combine oat flour, coconut flour, baking powder, baking soda, and sea salt.
- In a separate bowl, beat egg whites until they form peaks.
- In a third bowl, whisk together canola oil, honey, molasses, vanilla, buttermilk, milk, and egg yolks.
- Add the wet mixture to the dry and mix until just combined.
- Stir in the chocolate chips.
- Fold in the egg whites using a flat spatula.
- Using a disher, scoop into lined muffin tin (fill 75%-100%).
