Creamy Rich No-Bake Cheesecake
- 200 grams Cream cheese
- 70 grams Sugar
- 200 ml Heavy cream (low-fat is OK)
- 1 lemon Lemon juice
- 1/2 lemon Lemon zest
- 80 grams Biscuits
- 40 grams Melted butter
- 8 grams Gelatin
- 3 tbsp Water
- Add some biscuits to a plastic bag and crush them into fine crumbs.
- Then add in some melted butter, mix everything together in the bag, and pack it into the bottom of the cake mould.
- Let the cream cheese return to room temperature.
- Or cover it in cling film and microwave for 30 seconds.
- Place the gelatin in a heat-resistant container and soak it in water.
- Add the sugar into the bowl from Step 2 and beat together with a whisk until creamy.
- Dissolve the gelatin by heating it in the microwave for 20 seconds.
- Pour the heavy cream into a separate bowl and whip it until soft peaks form.
- Mix the gelatin into the bowl from Step 4.
- Then add in the lemon juice and lemon zest and mix briskly.
- Lastly, pour in the whipped cream and mix it together with everything else.
- Pour the mixture into the mould from Step 1, even out the top, and leave to chill and set in the refrigerator.
- When set, remove the cake from the mould, cut it into slices, and pour over your choice of sauce.
- You can also try lining the bottom of the mould with a layer of sponge cake if you'd prefer.
- If you make the cheesecakes in small ramekins, you can eat them at your leisure.
