Quinoa with Edamame, Feta and Mint

  1. Bring water and quinoa to boil in saucepan on high heat; cover.
  2. Simmer on medium-low heat 15 min.
  3. or until quinoa is tender and water is absorbed.
  4. Remove from heat; let stand 5 min.
  5. Spoon quinoa into large bowl; fluff with fork.
  6. Add all remaining ingredients except mint; mix lightly.
  7. Top with mint.
