Quinoa with Edamame, Feta and Mint
- 2 cups water
- 1 cup black quinoa, uncooked
- 1 cup edamame (shelled), cooked
- 1/2 cup Kraft Greek with Feta and Oregano Dressing
- 1/2 cup Cracker Barrel Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper
- 1/4 cup fresh mint leaves
- Bring water and quinoa to boil in saucepan on high heat; cover.
- Simmer on medium-low heat 15 min.
- or until quinoa is tender and water is absorbed.
- Remove from heat; let stand 5 min.
- Spoon quinoa into large bowl; fluff with fork.
- Add all remaining ingredients except mint; mix lightly.
- Top with mint.
