Summer Veggie Stir-fry with Turkey Kielbasa
- 1 whole Medium To Large Bell Pepper (any Color), Stem And Seeds Removed, Sliced Into Strips
- 1 whole Medium Red Onion, Sliced
- 2 whole Medium Zucchini, Sliced Into Medallions
- 1 whole Medium Yellow Squash, Sliced Into Medallions
- 3/4 teaspoons Coarse Garlic Salt
- 3 teaspoons Fresh Minced Garlic
- 1/2 teaspoons Paprika
- 1/4 teaspoons Crushed Red Pepper
- 1 whole (14 Oz. Size) Link Of Pre-cooked Hardwood Smoked Lean Turkey Kielbasa, Cut Into Bite Sized Medallions
- Feta Cheese Crumbles, Optional For Serving
- Cooked Brown Rice Or Pita Bread, Optional For Serving

- In a large greased saute pan (use one with a lid) over medium low heat (my stove was level 4) combine the peppers, onion, zucchini, squash and garlic salt.
- Put the lid on.

- Allow vegetables to saute for 15 minutes or until they begin to soften, stirring every 4-5 minutes.
- 3.
- Add the spices and continue to saute on medium to low heat for another 5 minutes stirring halfway through.
- 4.
- Stir in the sliced sausage and cook another 3 minutes until heated all the way through.
- 5.
- Serve over brown rice or pita bread with a sprinkle of feta cheese.
