Summers On! Make This Lemony Lobster And Kelp Salad
- 1/2 teaspoon grated lemon zest
- 1/4 cup fresh lemon juice (from about 2 lemons)
- 1/4 cup vegetable stock
- 2 tablespoons tamari
- 3/4 tablespoons coarse sugar
- 1 teaspoon grated peeled fresh ginger
- 4 cups assorted salad greens
- 1/2 cup carrots, julienned
- 1/2 cup zucchini, julienned
- 1/2 cup shredded red cabbage
- 6 ounces cooked Maine lobster meat (see page 14)
- 1 ounce slaw-cut kelp
- In a small bowl, whisk together all the dressing ingredients (the dressing can be made a day in advance if desired).
