Satay Meatloaf
- 400g lean beef / veal mince
- 400g lean pork mince
- 1 onion, coarsely grated King Sooper's 1 lb For $0.99 thru 02/09
- 1 cup fresh breadcrumbs
- 1 cup grated carrot Target 2 lb For $3.00 thru 02/06
- 1/3 cup KRAFT* Light Crunchy Peanut Spread
- 1/4 cup finely chopped coriander
- 1 egg, lightly beaten
- 2 tablespoons sweet chilli sauce
- 2 tablespoons kecap manis
- Combine all the ingredients in a large bowl, being careful not to overmix.
- Place the mixture in a greased-lined loaf tin; pressing down gently.
- Cook at 180C for 1 hour and 10 minutes or until cooked through.
- Rest for 5 minutes.
- Slice meatloaf and serve drizzled with pan juices.
