Sweet And Sour Pork
- 1 1/2 lb. lean pork loin, cut in thin strips
- cooking spray
- pineapple juice drained from 1 (No. 2) can pineapple chunks
- 1/2 c. water
- 1/3 c. white vinegar
- 1/4 c. brown sugar
- 2 Tbsp. cornstarch
- dash of pepper
- 3/4 c. green pepper, thinly sliced
- 1/2 c. onion, thinly sliced
- pineapple chunks
- steamed rice
- Trim all visible fat from lean pork loin; cut pork in thin strips.
- Saute in pan sprayed with cooking spray until golden brown.
- Combine next 6 ingredients.
- Place in glass jar and shake until well mixed.
- Pour into pan and cook until the sauce is clear and slightly thickened.
- Add the meat.
- Cook over low heat for about 1 hour.
- About 5 minutes before serving, add the green pepper, onion and pineapple chunks.
- Serve over rice.
