Light Orange-Roasted Salmon

  1. Preheat oven to 450 degrees.
  2. Lay the salmon, skin side down in a baking dish that has been sprayed lightly with lite olive oil.
  3. Combine the tomatoes, sugar, red pepper flakes, olives, orange juice and orange zest in a bowl, stir thoroughly and pour over the salmon.
  4. Roast the salmon for 10 minutes, or until cooked.
  5. through to desired degree of doneness.
  6. Cut into 4 pieces.
