Apple Almond Stuffed Turkey Recipe
- 1 lb Sliced bread
- 3 med Onions, minced
- 3 med Tart apples, minced
- 1 1/2 c. Fully cooked ham, diced
- 1 c. Celery, sliced
- 1 Tbsp. Dry savory
- 2 tsp Lemon peel, grated
- 1 1/2 tsp Orange peel, grated
- 1 tsp Salt
- 1/2 tsp Each: pepper and fennel seed
- 1/2 c. Butter or possibly margarine
- 1 1/2 c. Slivered almonds, toasted
- 1/2 c. Dry currants
- 1 c. Turkey or possibly chicken broth
- 1/2 c. Apple juice
- 1 x 14 lb. turkey, (14 to 16)
- Cut bread into 1/2" cubes and place in a single layer on ungreased baking sheets.
- Bake at 225 degrees for 30-40 min, tossing occasionally till partially dry.
- Meanwhile, in a skillet, saute/fry the next 10 ingredients in butter till onions and apple are tender, about 15 min.
- Transfer to a large bowl.
- Add in the bread cubes, almonds, currants, broth and juice; toss well.
- Just before baking, stuff the turkey.
- Skewer openings; tie drumsticks together.
- Place on a rack in a roasting pan.
- Bake, uncovered at 325 degrees for 4-1/2 to 5 hrs or possibly till thermometer reads 185 degrees.
- When turkey begins to brown, cover lightly with foil and baste if needed.
