Orange Glazed Raisin Muffins
- 1 2/3 c. all-purpose flour
- 1/2 c. Kretschmer wheat germ (any flavor)
- 1/3 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt (optional)
- 3/4 c. Sun-Maid raisins
- 1 c. skim milk
- 1/4 c. vegetable oil
- 1 egg, slightly beaten
- 2 tsp. grated orange peel
- 1/2 c. powdered sugar
- 1 Tbsp. orange juice
- Heat oven to 400u0b0.
- Spray 12 medium muffin cups with nonstick cooking spray or line with paper baking cups.
- Combine first 6 ingredients and mix well.
- Add combined milk, oil, egg and grated orange peel; mix just until dry ingredients are moistened.
- Fill prepared muffin cups 2/3 full.
- Bake 18 to 20 minutes or until light golden brown.
- Remove to wire rack.
- In a small bowl, combine powdered sugar and orange juice.
- Drizzle over slightly cooled muffins.
- Makes 12 muffins.
