Loaded Baked Potato Soup with Bacon and Shrimp

  1. preheat oven to 400F
  2. scrub potatoes and prick skin with a fork
  3. bake potatoes until tender, about 30 mins
  4. bake bacon slices in the oven until crisp.
  5. place stick of butter in heavy bottom pot and add flour makong a roux.
  6. make sure not to let it get any color.
  7. whisk in cream and let cook until it thickens
  8. add milk and let it thicken just a little bit more then add all cheese.
  9. whisk mixture until the cheese is melts.
  10. mixture should be smooth, NO LUMPS
  11. add 2 tablespoons of bacon drippings to the soup and stir.
  12. add 2 tablespoons butter to a pan and sautee shrimp using old bay and essence for seasoning.
  13. add salt and pepper to taste to cheese mixture
  14. cut potatoes lenthwise and scoop out pulp placing in soup.
  15. with a potato masher carefully mash potatoes leaving some lumps.
  16. crumble bacon
  17. Once the soup is done place in bowl using various toppings.
  18. Shrimp, bacon, green onions, extra cheese and sour cream
  19. ENJOY!!
