Chicken Ratatouille Stew
- 4 each chicken breast halves, boneless, skinless cubed
- 1 jar spaghetti sauce
- 1 medium eggplant peeled, chopped
- 2 each tomatoes chopped
- 2 small zucchini slice
- 1 each green bell peppers
- 1 large onions chopped
- 3 cloves garlic minced
- 1 teaspoon basil dried
- 1 teaspoon oregano dried
- In large bowl, combine all ingredients, mix well.
- Pour into 3 1/2 to 4 qt crockpot.
- Cover; cook on LOW for 8 to 10 hours or until chicken is tender and no longer pink.
