Angel Hair With Tomato and Basil
- 3 tablespoons extra virgin olive oil
- 12 cup finely chopped onion
- 14 teaspoon crushed red pepper flakes
- 1 (14 1/2 ounce) can whole tomatoes, undrained
- 1 garlic clove, finely chopped
- 14 teaspoon coarse salt (kosher or sea salt)
- 8 ounces uncooked angel hair pasta (capellini)
- 14 cup chopped fresh basil leaf
- 12 cup shredded parmesan cheese (or both) or 12 cup shredded romano cheese (or both)
- In 10-inch skillet, heat 2 tablespoons of the oil over medium heat.
- Add onion and red pepper flakes; cook 5 minutes, stirring frequently, until onion is tender.
- Add tomatoes, garlic and salt.
- Heat to boiling.
- Meanwhile, cook pasta as directed on package.
- Drain; place in serving bowl.
- Pour tomato mixture over pasta; toss gently to coat.
- Add basil, cheese and remaining 1 tablespoon oil; toss.
- This makes 6 1-cup servings.
