Roasted Vegetable Egg Bake

  1. Preheat oven to 400 degrees.
  2. Spray 13x9 dish with nonstick cooking spray.
  3. Heat the oil in a 12 inch skillet over medium heat.
  4. Cook onion and veggies 8-10 minutes until heated through and tender.
  5. Add ham.
  6. Sprinkle with seasoning packet from veggies; stir to coat.
  7. Spread in prepared dish.
  8. Mix Bisquick, milk and eggs.
  9. Pour over veggies.
  10. Bake uncovered about 25 minutes or until a knife inserted into the center of the dish comes out clean.
  11. Sprinkle with cheese, bake 5 minutes more or until cheese melts.
