Mexican Wedding Cookies Ii

  1. Preheat oven to 350F (180C).
  2. Grease cookie sheets.
  3. In large bowl with mixer at medium speed, beat together 1 cup of the sugar, butter, pecans and vanilla.
  4. With spoon stir in flour.
  5. Shape dough into 1-inch balls, flatten slightly.
  6. Place on cookie sheets about 1 inch apart.
  7. Bake 12 to 15 minutes or until done but not browned.
  8. Cool 5 minutes on cookie sheets.
  9. In small bowl, mix remaining 1/2 cup sugar and cinnamon.
  10. Gently toss each cookie in cinnamon mixture; cool on wire rack.
