Baked Salmon with Veggies

  1. Preheat oven to 450.
  2. Place salmon in middle of a large piece of heavy foil.
  3. Rub oil into flesh of salmon; sprinkle with ginger, and season with freshly ground black pepper if desired.
  4. Place onions, peppers, and 1/2 of the carrots in a small bowl and toss to mix.
  5. Arrange vegetables on top of salmon.
  6. Seal foil to create a tightly sealed pocket.
  7. Bake 30 min.
  8. Cook rice according to package instructions.
  9. Divide into 4 equal portions.
  10. Top with salmon and vegetables.
  11. Toss lettuce with tomatoes and remaining carrots; drizzle with salad dressing.
  12. Divide evenly into 4 salad bowls; serve each person a dinner roll on the side.
  13. Toss banana and kiwi gently; divide between 4 bowls.
  14. Blend cinnamon and sugar into yogurt; place 1/4 of the mixture on top of each bowl of fruit.
  15. Serve each person an 8 fl oz glass of water with meal.
