Spinach & Artichoke Salad
- 5 cups spinach
- 2 (15 ounce) cans artichokes, sliced
- 1 garlic clove, finely chopped
- 2 teaspoons lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons red wine vinegar
- 4 tablespoons extra virgin olive oil
- 14 cup parmesan cheese, shredded

- Combine garlic, lemon zest, lemon juice and vinegar in a small dish.
- Allow to sit for 5 minutes.

- Whisk olive oil to mixture.

- Combine all ingredients.
