Shrimp in Coconut Milk

  1. Wash shrimp, shell and devein.
  2. Heat ghee and fry onions, garlic and ginger until onions are soft but do not let them brown.
  3. Add chilies, turmeric, and curry leaves and fry 1 minute longer.
  4. Add coconut milk and salt and stir while bringing to simmering point.
  5. Simmer uncovered for 10 minutes, then add shrimp and cook 10 to 15 minutes more.
  6. Remove from heat and add lemon juice to taste.
