Shrimp in Coconut Milk
- 1 1/2 pounds shrimp large size
- 1 tablespoon ghee (clarified butter) or oil
- 2 each onions thinly sliced
- 2 each garlic cloves crushed
- 1 teaspoon ginger fresh, finely grated
- 2 each red chili peppers or green, fresh
- 1 teaspoon turmeric ground
- 8 each curry leaves
- 2 cups coconut milk
- 1 teaspoon salt
- 1 x lemon juice to taste
- Wash shrimp, shell and devein.
- Heat ghee and fry onions, garlic and ginger until onions are soft but do not let them brown.
- Add chilies, turmeric, and curry leaves and fry 1 minute longer.
- Add coconut milk and salt and stir while bringing to simmering point.
- Simmer uncovered for 10 minutes, then add shrimp and cook 10 to 15 minutes more.
- Remove from heat and add lemon juice to taste.
