Ginger Apple Crisp

  1. Heat oven to 400F (200C).
  2. Spray 8 inch square (1 1/2 quart) baking disk with non stick spray.
  3. In a small bowl, combine the cornflake crumbs, brown sugar, flour and ginger; mix well.
  4. Add in melted margarine or butter and mix well.
  5. Place apples in spray-coated dish.
  6. Add sugar and lemon juice; toss to coat.
  7. Sprinkle apples with crumb mixture; press gently.
  8. Bake for 25 to 30 minutes or until apples are tender and mixture is bubbly.
  9. Cool slightly; serve with frozen vanilla yogurt or ice milk.
