Chilli Con Carne Baked Potatoes
- 6 large washed potatoes
- 2 teaspoons oil
- 300g beef mince
- 1/2 red onion, chopped
- 1/2 teaspoon ground chilli
- 400g can crushed tomatoes
- 300g can red kidney beans, drained
- 1 tablespoon tomato paste
- 2 teaspoons VEGEMITE
- 1/2 green capsicum, roughly chopped
- 1/2 KRAFT Cheddar Cheese Spread, softened
- salad, to serve
- Place potatoes on a baking tray and bake at 180C for 45-60 minutes, or until tender.
- Heat oil in a non-stick frying pan over high heat.
- Add beef and cook until browned, then add onion and chilli and cook a further 2 minutes.
- Add tomatoes, beans, tomato paste, Vegemite* and capsicum and simmer, uncovered, for 10 minutes.
- Cut a cross on the top of the potatoes and top with some beef mixture.
- Dollop with some cheese spread and serve with salad.
