Smoked Salmon and Capers over Linguini
- 4 ounces salmon fillets, smoked and flaked (I use Echo Falls Cajun Flavor found near the fish counter at my local grocery store)
- 1 green pepper, sliced in thin strips
- 1 yellow pepper, sliced in thin strips
- 3 tablespoons olive oil
- 3 tablespoons capers, drained
- 1 cup cherry tomatoes, cut in half
- 1 lb linguine, cooked to taste
- parmesan cheese, for topping
- salt, for pasta water and to taste
- Boil salted water and cook noodles to taste.
- Drain and cover, set aside.
- Heat large saute pan.
- Add olive oil, capers, peppers, cherry tomatoes, and cook until tender, not soft and should still be bright in color.
- Add salmon and heat through.
- Add pasta to pan and warm through.
- Serve in large bowl and top with Parmesan cheese if desired.
