Oatmeal Rolls
- 2 1/3 c. water, divided
- 1 c. dry oatmeal
- 3 Tbsp. butter or margarine
- 2/3 c. packed brown sugar
- 1 1/2 tsp. salt
- 2 pkg. active dry yeast
- 5 to 5 3/4 c. flour, divided
- In saucepan, bring 2 cups water to boil; add butter and oatmeal.
- Simmer 1 minute.
- Remove to a large bowl and let cool to 120u0b0 to 130u0b0.
- Heat the remaining water to 120u0b0 to 130u0b0; add yeast. To the oatmeal mixture, add 1/2 flour.
- Mix well.
- Add enough remaining flour to make a soft dough.
- Turn out on floured surface and knead 6 to 8 minutes, or until smooth and elastic.
- Add additional flour if necessary.
- Place dough in greased bowl and turn once.
- Cover and let rise until double (1 hour).
- Punch dough in half, divide and shape each half into balls.
- Place 1-inch apart in a 9 x 13-inch pan.
- Cover and let rise until double, 40 to 60 minutes.
- Bake at 350u0b0 for 20 to 30 minutes.
