Marinated Portabella Steaks With Sweet and Sour Rice
- 2 portabella mushrooms
- 1 cup soy sauce
- 2 crushed garlic cloves
- 1 bell pepper
- 12 onion
- 1 cup pineapple chunk
- 1 cup uncooked rice
- 23 cup rice vinegar
- 1 cup water
- 8 tablespoons brown sugar
- 2 tablespoons catsup
- 2 tablespoons soy sauce
- Marinate portabellas in 1 cup soy sauce and the crushed garlic.
- Set aside until the rice is done.
- Combine vinegar, water, brown sugar, catsup, and 2 tablespoons soy sauce.
- Bring to a boil.
- Add rice and reduce to simmer for 35 minutes or until soft.
- Stir fry the onions and bell peppers until the onions are translucent.
- Add pineapple chunks until to warm.
- Make a bed of rice for the mushroom and top with stir-fried peppers, onions, and pineapple.
