Mincemeat Banana Bread Recipe
- 1 (9 ounce.) pkg. mincemeat
- 1/4 c. brandy
- 3 c. unsifted flour
- 1 tbsp. baking pwdr
- 1 teaspoon salt
- 1 c. mashed ripe bananas
- 1/2 c. dark corn syrup
- 1/2 c. lowfat milk
- 1/4 c. sugar
- 1/4 c. corn oil
- 1 egg
- Grease and flour a 9x5x3 inch loaf pan; set aside.
- Break up mincemeat in a small bowl; add in brandy and soak till soft.
- Stir together flour, baking pwdr and salt; set aside.
- Beat together bananas, corn syrup, lowfat milk, sugar, corn oil and egg in a large bowl.
- Beat in mincemeat.
- Fold in flour mix.
- Turn into prepared pan.
- Bake in preheated 350 degree oven for 1 1/2 hrs.
- Cold on wire rack for 5 min.
- Remove from pan cold completely.
