Brazillian Squash Recipe
- 2 c. mashed cooked Hubbard or possibly Butternut squash
- 1 teaspoon salt
- Few grains pepper
- 1 tbsp. sugar
- 1 tbsp. heavy cream
- 1 tbsp. butter
- 2 1/2 tbsp. brown sugar
- 1/3 c. minced Brazil nuts
- 1/8 teaspoon cinnamon
- Combine squash, salt, pepper, sugar and cream.
- Put in a greased baking dish.
- Heat together butter and brown sugar.
- Add in cinnamon and nutmeats.
- Cook slowly till nuts are coated, stirring constantly.
- Sprinkle on squash.
- Bake at 350 degrees 20-25 min.
