Exotic Fruit Soup

  1. Put all of the above in a saucepan and bring to a simmer.
  2. Turn off the heat and set aside 30 minutes.
  3. Now strain through a fine mesh strainer and chill the liquid
  4. Note: All fruit should be very cool in temperature.
  5. Divide all of the prepared fruit except the coconut, passion fruit, banana and star fruit between four chilled bowls.
  6. Pour the infusion over the fruit.
  7. Now garnish with the passion fruit, banana and star fruit.
  8. Serve
