Creamy Potato Soup Recipe
- 2 tbsp. butter
- 2 tbsp. onion, finely minced
- 1 1/2 teaspoon salt
- 1/4 teaspoon celery salt
- 1/8 teaspoon pepper
- 3 1/2 c. lowfat milk
- 1 1/3 c. instant mashed potato flakes (dry)
- Paprika (for garnish)
- Parsley (for garnish)
- Heat butter, onion, salt, celery salt, pepper and lowfat milk to scalding.
- Stir in potato flakes, stirring constantly.
- (Soup should be the consistency of heavy cream.)
- If you like, garnish each serving with paprika and parsley.
- Makes 4 servings (1 c. each).
