Berry Jam Muffins

  1. Preheat oven to 425.
  2. Combine pancake mix and sugar.
  3. Cut in butter until crumbly.
  4. Stir in milk until moistened.
  5. Line muffin pans with paper liners or cooking spray.
  6. Spoon 1 1/2 tablespoons batter into each cup.
  7. Spoon 1 teaspoon jam in center of each muffin.
  8. Top with 1 teaspoon remaining batter.
  9. Batter may not completely cover jam.
  10. For the topping: combine butter and brown sugar.
  11. Stir in oats, flour and cinnamon.
  12. Crumble topping evenly over muffins.
  13. Bake 14-16 minutes.
