paneer & spring onions
- 250 grams paneer(fresh or frozen)
- 1/2 tbsp salted butter
- 1 tsp olive oil
- 1/2 tsp turmeric powder
- 1 dash dried thyme
- 1 dash garam masala
- 3 medium (or 2 large)fresh red chillies(can remove seeds if u want it milder)
- 1 ginger(an inch about peeled)
- 6 clove garlic
- 1 1/2 tsp salt
- 1 tsp crushed black pepper
- 1/2 lemon(juiced)
- 3/4 tbsp olive oil
- 1 small cinamon stick
- 2 spring onions(only greens chopped)
- 2 onions(cut in thick slices)
- 2 tomatoes(diced)
- 3 spring onions(both white & green parts sliced plus the white part of the other two spring onions)
- cut the paneer into medium diamond shaped pieces; if using frozen paneer then thaw it properly before cutting
- grind all the dry ingredients for marinate into a coarse paste in a food processor or a mortar & pestle(I used the mortar & pestle gives a good coarse paste)
- in a bowl add the paste, the oil, lemon juice & spring onions & mix well
- add paneer pieces to this mix, mix well & let it marinate for half an hour
- when the paneer is marinated clean the paneer of the marinate as much as u can without washing it.
- reserve 1 teaspoon of the marinate & discard rest
- heat a saucepan.add the olive oil,butter.dont let butter brown
- add the onions,& the whites of the spring onions
- saute till the onion becomes translucent,add the turmeric,thyme ,garam masala and the reserved marinate .add the tomatoes,cook for 2 minutes & toss well
- add the greens of the spring onions,toss well.cook uncovered for 5 minutes
- now add the paneer.toss well and cook again for 5 more minutes on medium heat
- mix well and let it cook for 2 more minutes on low heat
- remove in a plate & serve garnished with spring onion greens
