Pork Chop Rice Bake Recipe
- 6 pork chops, 1/2" thick
- 3/4 c. long grain rice
- 1 quart. tomatoes
- 1 teaspoon salt
- Dash pepper
- 1/2 teaspoon chili pwdr
- 1/4 c. minced green pepper
- 1 c. shredded cheddar
- 6 green pepper rings
- 6 mushroom crowns
- 6 slices onion
- Place rice in 9"x13" baking dish or possibly pan.
- Sprinkle seasonings and minced green pepper over.
- Add in tomatoes.
- Arrange pork chops on top, salt lightly, place onion slice on each chop.
- Cover tightly with foil, bake at 325 degrees for 1 1/2 hrs.
- Remove foil, sprinkle cheese over all, place pepper ring and mushroom crown on each chop.
- Return to oven and bake 10 to 15 min longer.
