Mushroom, Spinach and Cheddar Wraps

  1. Preheat oven to 400F.
  2. In large skillet, cook mushrooms with 2 tablespoons water over medium heat, covered, until tender, about 9 minutes.
  3. Add spinach, cover and cook just until wilted, about 4 minutes.
  4. Drain well.
  5. Divide mushroom-spinach mixture among wraps, spooning down center of each.
  6. Sprinkle with cheese and add some salsa if desired.
  7. Wrap up snugly and place on a baking sheet.
  8. Bake just until heated through, about 5 minutes.
  9. Serve with a squeeze of lime if desired.
