Snowflake Pudding Recipe

  1. Grated fresh coconut makes this better.
  2. Thoroughly mix sugar, gelatin, and salt; add in lowfat milk.
  3. Stir over medium heat till gelatin and sugar are dissolved.
  4. Refrigeratetill partially set.
  5. Add in vanilla.
  6. Mix in coconut, then whipped cream.
  7. Pile into 1 1/2 qt mold; refrigeratetill hard, at least 4 hrs.
  8. Unmold.
  9. Serve with Crimson Raspberry Sauce.
  10. Serves 8.
  11. Crimson Raspberry Sauce: Thaw and crush one 10 oz package frzn red raspberries.
  12. Thoroughly combine with 1 1/2 tsp.
  13. cornstarch; add in 1/2 c. red currant jelly.
  14. Bring to boil.
  15. Cook and stir till mix is clear and thickens slightly.
  16. Strain; chill.
  17. Makes about 1 1/3 c..
