Island Blackberry Cobbler
- 4 -5 cups wild blackberries
- 34 cup sugar
- 12 cup margarine
- 18 teaspoon salt
- 1 cup flour
- 1 teaspoon baking powder
- 12 cup milk
- 1 cup sugar
- 1 tablespoon cornstarch
- 1 cup boiling water
- Spread the berries evenly in a 9x13" baking dish.
- In a large mixing bowl cream together sugar and softened margarine.
- Add salt, flour and baking powder alternately with milk.
- Drop this batter by spoonfuls over the berries.
- Mix together 1 cup sugar and cornstarch and sprinkle over the batter.
- Pour boiling water evenly over all.
- Bake at 375* for 45-60 minutes, or until top is light brown and berry juice is starting to set.
- Serve cobbler at room temperature.
