Autumn Harvest Stew Recipe
- 2 c. onions
- 2 Tbsp. sauteeing liquid
- 1 c. minced celery
- 1/4 c. garlic
- 1 Tbsp. blackstrap molasses
- 28 ounce canned diced tomatoes
- 16 ounce canned mashed pumpkin
- 3 c. beans
- 1 c. water
- 1 c. minced sweet potato
- 1 c. white hominy, not liquid removed
- 1 1/2 tsp salt
- 1 1/2 tsp cumin
- 1 1/2 Tbsp. chili pwdr
- 1 tsp crushed chiles
- 1/4 tsp fenugreek
- 1/4 tsp coriander
- 1 tsp ginger pwdr, up to 2
- 1/8 tsp asafoetida pwdr
- 1/2 x lemon, juice of
- Saute/fry onions in liquid till softened.
- Add in remaining ingredients except lemon juice and cook.
- Add in lemon juice.
- Cook slowly till thick and sweet potato pcs are soft, about 1 to 2 hrs.
