Black Bean and Two-Cheese Quesadillas

  2. In a bowl, combine all filling ingredients.

  4. Lay tortillas out on a flat surface in a single layer and spread filling evenly over half of each tortilla.
  5. Fold unfilled half of tortilla over filled side and press together.

  7. Grill quesadillas for 2 to 3 minutes per side, or until lightly browned.
  8. (You can also bake them in a single layer on a sheet pan in a preheated 400 F oven for 7 to 10 minutes, or cook for a few minutes per side in a lightly oiled non-stick skillet or grill pan).
