Low Fat Buttermilk Peppercorn Dressing
- 12 cup buttermilk, low-fat
- 13 cup mayonnaise, light
- 14 cup cucumber, grated and peeled
- 1 tablespoon green onion, minced
- 1 tablespoon dill, fresh and minced
- 1 tablespoon Dijon mustard
- 2 teaspoons wine vinegar
- 1 teaspoon peppercorn, freshly cracked
- 1 garlic clove, minced
- Place ALL ingredients in a blender, cover and process until smooth.
- Pour in a container, cover and refrigerate at least 1 hour before serving.
