David Tanis's Yogurt Sauce

  1. In a small bowl, mix together the yogurt, ginger, mint, chile and cayenne.
  2. Season with salt and pepper to taste.
  3. Let flavors meld at least 5 minutes.
  4. (May be prepared several hours ahead.)
  5. Serve chilled.
