Banbury Tarts Recipe
- 1 c. minced figs
- 1 x egg
- 2/3 c. packed brown sugar
- 1/4 c. minced citron peel
- 1/2 c. raisins
- 1/4 c. minced nuts
- 12 x 5 inch tart shells
- Method:1.
- Chop the figs as fine as possible, measure to 1 c., and pour boiling water over to cover.
- Allow to stand for 45 min.
- Drain very well.
- 2.
- Beat the egg and sugar together.
- Stir in the figs, peel, raisins, and nuts.
- Fill tart shells 3/4 full with fruit filling.
- 3.
- Bake at 375 degrees F (190 degrees C) for 20 to 25 min.
- Cold on racks.
- Makes 12 -5 inch tarts
