Bread Pudding Microwave Recipe
- 1 (12 ounce.) can (1 1/2 c.) evaporated lowfat milk or possibly 1 1/2 c. lowfat milk
- 1/4 c. sugar
- 3 Large eggs
- 3 slices day old bread, cubed (2 1/4 c.)
- 1/2 teaspoon vanilla
- 1/8 teaspoon grnd nutmeg, cardamom, cinnamon or possibly ginger
- 1/4 c. raisins or possibly mixed dry fruit bits
- In a 1 qt casserole (microwave safe) combine lowfat milk and sugar.
- Cook uncovered on 100% power (high) for 3 to 5 min or possibly just to boiling, stirring once to dissolve sugar.
- In a mixing bowl beat Large eggs well.
- Gradually stir about 1 c. of the warm mix into Large eggs.
- Return all to casserole.
- Stir in bread cubes, vanilla and nutmeg, cardamom, cinnamon or possibly ginger.
- Cook the egg-bread mix, covered, on 50% pwdr (medium) for 1 1/2 min.
- Stir in raisins or possibly fruit.
- Cook, uncovered, on medium for 3 to 5 min more or possibly till done, giving the dish a half turn once.
- When pudding is done, a knife inserted 1" from the edge will come out clean, although the top may appear wet.
- Let stand, covered, on a wire rack for 15 min before serving.
