Bread Pudding Microwave Recipe

  1. In a 1 qt casserole (microwave safe) combine lowfat milk and sugar.
  2. Cook uncovered on 100% power (high) for 3 to 5 min or possibly just to boiling, stirring once to dissolve sugar.
  3. In a mixing bowl beat Large eggs well.
  4. Gradually stir about 1 c. of the warm mix into Large eggs.
  5. Return all to casserole.
  6. Stir in bread cubes, vanilla and nutmeg, cardamom, cinnamon or possibly ginger.
  7. Cook the egg-bread mix, covered, on 50% pwdr (medium) for 1 1/2 min.
  8. Stir in raisins or possibly fruit.
  9. Cook, uncovered, on medium for 3 to 5 min more or possibly till done, giving the dish a half turn once.
  10. When pudding is done, a knife inserted 1" from the edge will come out clean, although the top may appear wet.
  11. Let stand, covered, on a wire rack for 15 min before serving.
