Brunswick Stew Using Hogs Heads Recipe
- 5 x Hog heads
- 5 lb Grnd beef
- 2 gal Catsup
- 2 1/2 gal Tomatoes Red pepper
- 25 x Hens
- 50 lb Irish potatoes
- 30 x Onions
- 20 x Lemons
- 1 gal Whole kernel corn
- The day before need: Boil hogs head and hens in separate containers.
- When tender grind hogs head and remove bones from hens.
- In a 50 gallon pot brown grnd beef and minced onions.
- Add in grnd hogs heads and hens which have been cut in small pcs.
- Add in catsup, lemons and red pepper to taste.
- Simmer for 1 to 2 hours.
- Add in diced potatoes, tomatoes, whole kernel corn.
- Simmer till mix is well blended, about 1 hr.
- Serves 75
